Bitter orange (Citrus aurantium) is the tree that gives three different aromatic products: neroli (from flowers), petitgrain bigarade (from leaves), and bitter orange essence (from peel). The peel essence is the most affordable of the three. The bitter orange tree was brought to the Mediterranean by Arab merchants in the 10th century.
Bitter orange essence has a more complex, slightly bitter profile compared to sweet orange. It is intermediate between the sweetness of sweet orange and the sophistication of neroli. Photosensitizing like all expressed citrus.
