Perennial savory (Satureja montana) is the twin sister of mountain savory which already features in our database. In aromatherapy, the two names often designate the same plant, with composition variations depending on origin and terroir. Provencal savory is the essential aromatic herb of southern cuisine: it accompanies grilled meats, dried vegetables (hence its nickname 'donkey pepper') and goat cheeses. But its concentrated essential oil is an entirely different product, much more powerful and much more dangerous than the culinary plant.
Perennial savory is practically identical to mountain savory in terms of composition and use. Both contain carvacrol and thymol in variable proportions depending on origin. The distinction is more botanical than therapeutic. In practice, the same precautions and the same indications apply: last-resort anti-infectious, skin-burning, reserved for adults.

Perennial savory is a LAST RESORT anti-infectious. Same precautions as mountain savory: SKIN-BURNING (never neat), hepatotoxic with prolonged use, reserved for adults, courses of 5 days maximum. Always accompany with a liver protector. ALWAYS start with tea tree or linalool thyme before resorting to savory.
