Kaffir lime (Citrus hystrix) is a small thorny citrus native to Southeast Asia, widely used in Thai, Laotian and Reunionese cuisine. Its fragrant leaves are an essential ingredient in tom yum (Thai soup). On Reunion Island, kaffir lime is an essential element of rougail. The essential oil is distilled from the leaves (petitgrain) and has an intense, fresh lemon scent, different from all other citrus.
Kaffir lime petitgrain essential oil stands out from other citrus by its very high citronellal content (70-80%), which brings it closer to lemon eucalyptus than to lemon. It is therefore an anti-inflammatory and a calming agent, not a digestive tonic like other citrus. Its scent, while lemony, is more complex and exotic than that of lemon.
