Star anise (Illicium verum), also called badiane, is the fruit of an evergreen tree native to southern China and Vietnam. It is the star-shaped spice with 8 branches found in Vietnamese pho and Chinese five-spice blend. Star anise played a major role in modern pharmacy: shikimic acid, extracted from star anise, is the precursor of Tamiflu (flu medication). During flu pandemics, the price of star anise skyrocketed.
Star anise contains 80-95% trans-anethole, the same molecule as fennel. Antispasmodic and galactagogue, it shares the same properties and the same contraindications (hormone-dependent cancers, epilepsy). Its powerful anise scent makes it easy to identify.
