Douglas fir is not truly a fir -- it is a Pseudotsuga, a 'false hemlock'. Native to the humid forests of the Pacific Coast of North America, it owes its name to David Douglas, a Scottish botanist who introduced it to Europe in the 19th century. It is one of the tallest trees in the world -- some specimens exceed 100 meters. In France, it was massively planted in the Massif Central and the Vosges. Its scent is unmistakable: fresh, balsamic, with citrus notes that distinguish it from all other conifers.
What makes Douglas unique among conifers is its richness in citronellol and sabinene -- molecules unusual for a resinous tree.
