Blood orange is a natural mutation of sweet orange that appeared in Sicily in the 17th century, in the Etna region. Volcanic soils and temperature variations promote the production of anthocyanins, the pigments responsible for the red color. Moro, Tarocco and Sanguinello are the most famous varieties. The pressed essence retains a slightly raspberry note absent from classic sweet orange.
Differs from sweet orange by traces of anthocyanins and specific esters that give a more complex olfactory note, with almost red facets. Therapeutically almost interchangeable with sweet orange. The difference is mainly olfactory: more gourmet, more sophisticated.
